Apple and Honey Turkey Brine

Makes: 12 cups
What you need:
- 8 cups cold water
- 6 cups apple juice
- 3⁄4 cup kosher salt
- 1⁄2 cup honey
- 1⁄4 cup freshly cracked black peppercorns
- 1⁄4 cup chopped fresh parsley leaves
- 8 cloves garlic, chopped
- 1 medium sweet onion, chopped
- 1 (3-in.) cinnamon stick
- 3 fresh sage sprigs or 3 tbsp dried sage leaves
- 2 fresh thyme sprigs or 2 tbsp dried thyme leaves
- 1 tbsp crushed red pepper flakes
- 1 tsp cumin seeds
Make it Super:
Combine cold water and apple juice in a stockpot or large saucepan set over high heat. Cover and bring to a rolling boil.
Stir in kosher salt, honey, black peppercorns, parsley, garlic, sweet onion, cinnamon stick, sage, thyme, red pepper flakes, and cumin seeds. Return to a boil; remove from heat.
Cool to room temperature. Cover and refrigerate until chilled through. Use this to brine your turkey for up to 24 hours in the fridge.
