Basic Turkey Brine

A standard brine consists of two main ingredients: water and salt. I prefer kosher salt to iodized salt, because I find it gives the brines a cleaner, less salty finish. A good rule of thumb is for every 4 cups of water, add 1⁄4 cup kosher salt, but be careful when scaling up this recipe because it can easily become too salty.

Prep time: 5 minutes
Cook time: 30 minutes
Makes: 8 cups
What you need:
  • 8 cups cold water
  • 1⁄2 cup kosher salt
  • 1⁄4 cup granulated sugar
Make it Super:
Place cold water in a stockpot or large saucepan set over high heat. Cover and bring to a rolling boil.
Stir in kosher salt and sugar until dissolved. Return to a boil and remove from heat.
Cool to room temperature. Cover and refrigerate until chilled through. Use this to brine your turkey for up to 24 hours in the fridge.
