Turkey Tomato Alphabet Soup

Makes: 6 servings
What you need:
- 1 tbsp (15 mL) canola oil
- 2 carrots, chopped
- 1 onion, chopped
- 2 tsp (10 mL) Italian seasoning
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) fresh ground pepper
- 1 can (28 oz/796 mL) diced tomatoes
- 4 cups (1 L) turkey or vegetable broth
- 4 cups (400 g) coleslaw mix or thinly sliced cabbage
- 2 cups (250 g) chopped cooked Ontario turkey
- 1/2 cup (50 g) alphabet pasta
Make it Super:
In a soup pot, heat oil over medium heat. Cook carrots, onion, seasoning, salt and pepper for about 5 minutes or until softened. Stir in tomatoes to coat. Add broth and bring to a simmer for about 10 minutes or until carrots are tender.
Stir in cabbage, turkey and pasta. Return to a gentle boil for about 5 minutes or until pasta is tender.
