
Turkey Meatball Sub
Makes: 6 Servings
What you need:
- 1 lb (500 g) ground Ontario turkey
- 1 clove garlic, minced
- 1 egg, lightly beaten
- 1 slice whole wheat bread finely crumbled
- 2 tbsp (25 mL) parsley, chopped
- 1 tbsp (15 mL) white part of green onion
- 1/2 tsp (2 mL) dried oregano
- 1/8 tsp (0.5 mL) each, salt and pepper
- 2 cups (500 mL) zesty or spicy non-meat pasta sauce
- 6 crusty rolls split lengthwise and lightly toasted
- 1/4 cup (50 mL) skim milk Mozzarella cheese shredded
Make it Super:
In medium bowl, combine turkey, garlic, egg, bread, parsley, onion, oregano, salt and pepper. Shape mixture into 18 (1 1/2 inch/3.5 cm) balls. Place meatballs in 11×7 inch (2L) baking pan. Bake in 400ºF (200ºC) oven for 20 to 25 minutes. Remove from oven and drain any liquid. Add pasta sauce. Return to oven and bake 15 minutes longer or until sauce is bubbling. Place 3 meatballs on each roll; drizzle with sauce and top with cheese.
