Turkey Loaf with Chunky Tomato Pepper Sauce

Makes: 8 servings
- 1 tbsp (15 mL) vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 lb (1 kg) ground Ontario turkey
- 1 egg, beaten
- 1/2 cup (125 mL) milk
- 1/2 cup (125 mL) dry seasoned breadcrumbs
- 1 tsp (5 mL) salt
- 1/4 tsp (1 mL) fresh ground pepper
Chunky Tomato Pepper Sauce:
- 2 tsp (10 mL) vegetable oil
- 1 onion, chopped
- 1 large clove garlic, minced
- Half a green bell pepper, diced
- 3 tbsp (45 mL) tomato paste
- 1 can (28 oz/796 mL) diced tomatoes
- 2 bay leaves
- 1/4 tsp (1 mL) each salt and pepper
Add oil to a small skillet heat oil over medium heat; cook onion and garlic, stirring occasionally for about 5 minutes or until softened. Set aside to cool slightly. Scrape into large bowl.
Add turkey, egg, milk, breadcrumbs, salt and pepper; mix well. Line small baking sheet with parchment paper and shape turkey mixture into oval shape loaf on baking sheet. Bake in 400 F (200 C) oven for about 50 minutes or until meat thermometer registers 165 F (75 C) and juices run clear.
Chunky Tomato Pepper Sauce: Meanwhile, in large skillet, heat oil over medium heat. Cook onion, garlic and green pepper for about 5 minutes or until softened. Stir in tomato paste; add tomatoes, bay leaves, salt and pepper. Bring to a simmer and cook for about 10 minutes or until thickened. Remove bay leaves and serve with sliced turkey loaf.
