Mini Turkey Corndogs

4 Ontario fresh turkey sausages (about 1 lb/454 g)
1 cup (250 mL) all-purpose flour
1/2 cup (125 mL) cornmeal
1 tsp (5 mL) baking powder
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) chili powder or pinch cayenne pepper
1/4 tsp (1 mL) salt
1 cup (250 mL) milk
1 egg
3 tbsp (75 mL) butter, melted
3/4 cup (175 mL) shredded extra Old cheddar cheese
Grill turkey sausages over medium heat for about 2 minutes, turning occasionally until no longer pink inside. Let cool slightly and cut each into 6 pieces; set aside.
Grease 24 mini muffin tins; set aside.
Whisk together flour, cornmeal, baking powder and soda and salt.
In another bowl, whisk together milk, egg and butter. Pour over flour mixture and stir until just combined. Add cheese and stir until distributed evenly.
Spoon batter evenly into prepared mini muffin tins and gently press sausage piece into each. Bake in preheated 400 F (200 C) oven for about 10 minutes or until light golden. Let cool in pan on cooling rack slightly before serving warm.
Tip: The turkey sausage used were 6 inches (15 cm) in length, if smaller you will need more sausages. Look for flavoured fresh turkey sausages that your family will enjoy.
Substitute smoked turkey sausage for fresh sausages and omit grilling step.
Large Variation: Divide batter among 12 greased muffin tins. Cut sausages in half and push in centre of muffin sideways before baking.
