Grilled Sausages & Summer Salad
Prep time: Cook time: Makes: 4 servings
What you need:
- 4 turkey sausages, grilled and cut on the diagonal into 6 pieces
- 2 zucchini, sliced lengthwise
- 3 peppers (green, yellow and red), seeded and cut into 6 slices
- 2 red onions, peeled and sliced
- 4 Portobello mushrooms, stemmed
- 1/2 cup (120 mL) shaved Parmesan
- 5 cups (1.25 L) mixed salad greens
Dressing:
- 1/4 cup (60 mL) extra virgin olive oil
- 1/8 cup (30 mL) vinegar
- 1/8 cup (30 mL) lemon juice
- 1 tbsp (15 mL) lemon rind
- 1/2 tsp (2.5 g) sugar
- 1/4 tsp (1.25 g) salt
- 1 clove crushed garlic
- 1 small handful fresh mint, chopped
Make it Super:
Grill sausage, zucchini, peppers, red onions, and mushrooms to preferred doneness. Whisk together all of the dressing ingredients except the mint. Gently stir mint into dressing. Pour all the dressing over the grilled vegetables.
Place a handful of salad greens on each of four plates. Top with the grilled vegetables and sausage. Finish with shaved Parmesan cheese.
