
Grilled Lime & Oregano Turkey Skewers

Makes: 2 servings
1 lb (500 g) boneless skinless Ontario turkey breast, cut into large cubes
1 each, large red bell pepper and red onion cut into large chunks
Brine:
1 cup (250 mL) water
1/4 tsp (1 mL) each, fresh ground pepper, ground thyme, dried oregano and ground cumin
1/8 tsp (0.5 mL) dried basil
1 clove garlic, smashed
3 tbsp (45 mL) lemon juice
1 tbsp (15 mL) each, salt and brown sugar
Dressing:
2/3 cup (160 mL) water
4 tbsp (60 mL) olive oil
2 tsp (10 mL) lime juice
Half clove garlic, grated
1 tsp (5 mL) dry oregano
1 1/2 tsp (7 mL) sugar
Salt and fresh ground pepper, to taste
Brine: Combine all ingredients into a plastic bag or large mixing bowl. Add cubed turkey breast and allow to soak in refrigerator for at least 2 hours or overnight.
Dressing: Pour all ingredients into a large mixing bowl and whisk until combined. Set aside.
Remove turkey cubes from brine and pat dry. On presoaked wooden skewers, alternate bell pepper, turkey breast and red onion.
Grill skewers over medium-high heat for 8-10 minutes or until internal temperature is 165°F (74°C), basting with dressing every 2-3 minutes, rotating skewers halfway through cooking.
