Cajun Turkey Breast

- 3-4 lb (1.5-2 kg) boneless, skinless Ontario turkey breast
- 2 tbsp (30 mL) melted butter
- 2 tsp (10 mL) oil

Cajun Seasoning:
- 1 tsp (5 mL) cracked black pepper
- 2 tsp (10 mL) onion powder
- 2 tsp (10 mL) paprika
- 1 1/2 tsp (7 mL) salt
- 1 tsp (5 mL) dried thyme
- 1/2 tsp (2 mL) garlic powder
- 1/2 tsp (2 mL) ground cumin
- 1/2 tsp (2 mL) cayenne pepper
Make it Super:
Stir together butter, oil and Cajun seasoning ingredients. Rub all over turkey breast to coat well. Place turkey breast in roasting pan or on parchment-lined baking sheet. Roast in 375F (190C) oven to an internal temperature of 170F (77C). Let rest for 10 minutes before slicing and serving.
